Another one from my quick and simple range. Yummy coconut balls.
This is great if you need a quick fix of energy or if you are on the go. I take a bag along on long walks to dish out to my friends! Makes me very popular!
Coconut oil – a natural saturated fat – has many many benefits such as; easy to digest, is processed by the liver, which means it is immediately converted to energy so no fat storage.
Chia seeds are rich in fiber, omega-3 fats, protein, vitamins and minerals – Zinc, Potassium, Calcium, Copper, Phosphorus. Chia also contain essential fatty acids alpha-linolenic and linoleic acid and a host of other nutrients – yes those little seeds contain all of the above.
So Chia and Coconut are great together. Chia increases energy, whilst the coconut oil aids in digestion and metabolizing of the chia seeds. Vanilla is actually an anti – oxidant and honey is anti-bacterial, anti-fungal and good for balancing sugar.
Thrown all together you have a nutritious, high energy, delicious snack, which is so simple to make and even better – easy to store for later!
- 1 cup coconut oil (organic)
- 1/2 cup chia seeds
- 1 tsp vanilla extract
- 1 tbsp. honey
- 1/4 cup unsweetened coconut flakes
- Using a hand mixer, mix all ingredients together in a bowl.
- Spoon into muffin cups/muffin tin and freeze for an hour.
- Sprinkle with extra coconut flakes if desired
